Cat Cookies

I was bored this morning (back to school days will do that to you) and decided, "Cookies are the way to go." So I went into the kitchen and got out the ingredients for the only cookie recipe we always have the ingrediants for: Snicker doodles.  But, alas! We had no cream of tartar left. Recovering from my shock, I decided to improvise and I ended up with Cat Cookies, named after the Trader Joe's cookies that my brothers and I used to devour in one sitting. Enjoy!

1 cup soft butter
1 and 1/2 cups sugar
2 eggs
2 and 3/4 cups flour
1 tsp. cinnamon
1 tsp. cocoa powder
1 tsp. baking soda
1/4 tsp. salt

Heat oven to 400 degrees

Using a mixer, mix butter, sugar and eggs. In a separate bowl, combine dry ingredients. Add dry to wet in three parts. On an ungreased cookie sheet, place balls of cookie dough (no bigger than a walnut) in rows.  Make sure to give the cookies space to grow.  Bake for 8-10 minute or until the tops are golden. Remove from sheet, placing on a cooling rack. You may now eat one :)

These cookies aren't extremely sweet (although you could add sweetness by rolling them in sugar before they go into the oven) but their almost nutty flavoring I love. It is a light and fluffy center kinda cookie that's a little crispy around the edges. Oh, and it tastes like Fall.
